RECIPE: Broccoli Cheese Soup
Ready in 40 minutes
Ingredients
● 1 – TBS. Olive Oil
● 1 – Onion (diced)
● 3 – Garlic Cloves (sliced)
● 2 – Stalks Celery (chopped)
● 2 – Heads Broccoli (divided into florets)
● 1 – Potato (peeled, cut into cubes)
● ½ - tsp. Salt
● ½ - tsp. Pepper
● 2 – cups Vegetable Stock
● 1 – cup Milk *or favorite Milk Substitute
● 1 – cup Cheddar Cheese (grated)
Preparation
1. Place a medium-sized pan over medium heat.
2. Add the chopped onion and cook for 5-7 minutes, add the garlic and cook 1-2 minutes more.
3. Add the celery, broccoli and potato, and season with salt and pepper.
4. Pour in the vegetable stock and cover with lid. Simmer for 20 minutes.
5. Add the milk and blend the soup with a stick blender** until smooth.
6. Add the cheese and mix until melted.
7. Enjoy!
Tips
* Milk can be substituted for oat milk, soy milk, almond milk or any of your favorite milk substitutes.
** You may also use a standard blender (check your blender specifications for HOT Liquids first).
