Creamy Tuscan Salmon Recipe
Ingredients
4 - Salmon fillets
2 - tsp. Olive Oil
2 - TBS. Butter
6 - Garlic Cloves, diced
1 - small Yellow Onion, diced
5 oz. - jarred Sun-Dried Tomato, strips in oil, drained
1 3/4 - cups Half and Half
3 - cups Baby Spinach leaves
1/2 - cup freshly grated Parmesan Cheese
1 - tsp. Cornstarch (mixed with 1 TBS. Water (or) Milk)
1 - TBS. fresh Parsley, chopped
Salt & Pepper, to taste
Directions
Heat the oil in a large skillet over medium-high heat. Season both sides of your fillets with salt and pepper. Sear fillets in hot pan, flesh side down first, for about 5-7 minutes per side, or until cooked to your liking. Once cooked remove from pan and set aside.
Melt butter in the pan, leaving the remaining juicing from cooking your fillets. Add garlic, cook until fragrant, about 45 seconds. Add onion. Add sun dried tomatoes and cook for about 2 minutes to release flavors.
Reduce heat to low, add half and half, bring to a gentle simmer while stirring occasionally.
Add in spinach leaves, allow to wilt in sauce. Then add parmesan cheese. Allow sauce to simmer for 2-3 minutes while cheese melts and flavors come together. (For a thicker sauce, add the cornstarch mix into the center of the pan and continue to simmer while continuously stirring, mixing the cornstarch into the sauce, until sauce thickens.)
Add salmon fillets back to your pan, spoon sauce over each fillet. Sprinkle with parsley. Serve with pasta, rice, or fresh veggies.
