Grilled Pineapple Chicken Recipe
Ingredients
1 - fresh Pineapple (skin removed, cored, and cut into rounds)
2 - lbs. boneless Chicken Breasts ~ (or thighs if you prefer)
Marinade Ingredients
1/2 - cup Coconut Aminos (or) Soy Sauce
1/4 - cup Pineapple Juice (or) water
1/4 - cup Tomato Paste
6 - pitted Dates (soaked in warm water for 15 minutes to soften, then drained)
2 - tsp. Garlic Powder
2 - tsp. Chili Powder
1 - tsp. Paprika
Directions
To make the marinade, place all of the marinade ingredients into a blender or food processor, blend until all ingredients are well combined and sauce is smooth. Stop to scrape sides of blender, then mix well again.
Place chicken in a shallow bowl or dish then cover with fresh marinade. Toss to coat well. Cover and refrigerate for 30-minutes, or up to 24 hours.
Heat your grill to high heat. Add the chicken and the pineapple to your grill and cook, flipping chicken once and basting with any remaining marinade until cooked through. About 8-10 minutes per side, depending on the size and thickness of your chicken.
Remove Pineapple when it is grilled to your liking (roughly 3-4 minutes per side).
Serve chicken and pineapple with desired sides. (I like rice and greens)
