Make these delicious homemade Cherry Scones!
My son and I took a trip together to our local wholesale store and came home with a bag of frozen cherries he asked for to put in his smoothies. He saw a recipe for Cherry Scones on the back of the bag when putting them away in the freezer when I heard him say...
"Mom, can you make Cherry Scones for breakfast?!" – My 17 year old son
He had such excitement in his voice, I immediately responded without even thinking... "Of Course, Son!"
I asked for the bag and began making them right away! They turned out a bit funny looking as I had to improvise on a couple of the ingredients... But they turned out delicious and the kids loved them!
Next baking round, I'll ensure they "look" tastier too! ;-)
Cherry Scones
Makes - 7 to 8 Scones
Ingredients
1 cup frozen Organic Cherries
2 cups all-purpose flour
1/2 cup sugar (plus 1 tsp. for garnish)
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
8 TBS. butter, frozen
1/3 cup sour cream
1 large egg
1 TBS. of lemon zest
Directions
Adjust oven rack to lower-middle position and preheat oven to 400*.
In a medium bowl, mix flour, 1/2 cup sugar, baking powder, baking soda, and salt.
Grate butter into mixture on the large holes of a cheese grater; use your fingers to work butter into mixture until it resembles coarse meal.
Stir in Cherries
In a small bowl, whisk sour cream, egg, and lemon zest until smooth.
Using a fork, stir sour cream mixture into the flour mixture until large dough clump forms. Use your hands to press into a cohesive dough ball.
Place the dough mixture onto a lightly floured surface and pat into a 7-to-8-inch circle, about 3/4-inch thick.
Sprinkle top with remaining 1 tsp. sugar.
Use a sharp knife to cut into 8 triangles; place on a lined cookie sheet, about 1-inch apart.
Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.
